Who loves waffles? I do, and my kids love them too! So I make sure to make these healthy and delicious waffles about once a week for the family to enjoy. This recipe is so simple and easy to make, it contains a handful of heart healthy ingredients, and only takes about 15-20 minutes to whip up. You can enjoy them with fresh fruits, and a drizzle of pure maple syrup or raw local honey. My kids also love Miyoko’s plant butter on top.
Recipe
Ingredients:
- 3 cups organic GF rolls oats
- 3 ripe bananas
- 1 cup water or plant milk of choice
- 1/4 tsp. cinnamon
- 1 tsp. vanilla essence (alcohol free vanilla extract)
- 1 cup grated apples
- 1 Tspn. ground flaxseeds (optional)
Directions:
- Preheat a waffle iron (we use a mini waffle iron to make smaller waffles).
- Add the bananas and water or plant based milk into a high speed blender, blend for about 10 seconds.
- Add the oats, cinnamon, and vanilla. Blend until a smooth batter forms.
- Pour batter into a large bowl, then add in the grated apples and ground flaxseeds. Stir well to combine.
- Scoop onto waffle maker and cook until waffles are golden brown.
- Enjoy! These can be stored in a container and kept in the fridge for 3-4 days.
