Fall is in the air, and it’s a perfect time to start making pumpkin spice treats and cozy seasonal meals. 🧇

I love this time of year when pumpkins and winter squashes are plentiful. There are so many delicious ways to enjoy them—from soups and smoothies to baked treats and, of course, waffles!

We made these scrumptious Pumpkin Spice Waffles over the weekend and had the best breakfast. The kids enjoyed making them with me, and they ate their fair share too!

Made with simple, wholesome ingredients, these waffles are naturally gluten-free and a delicious way to welcome the fall season.

Here’s the recipe, enjoy! 🍂

Ingredients:

  • 3 cups rolled oats
  • 1 cup steamed pumpkin or butternut squash, or ¾ cup canned pumpkin purée
  • 2 ripe bananas
  • 1 tablespoon flaxseeds or chia seeds
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1 cup water, or a little more if needed

Directions:

  • Preheat a non-stick waffle iron.
  • If using fresh pumpkin or butternut squash, peel and cube it, then steam for about 12 minutes, or until soft. You can also use canned pumpkin purée.
  • Add all ingredients to a high-speed blender and blend until smooth. Add a little more water if needed to help with blending.
  • Pour enough batter onto the hot waffle iron to fill it evenly.
  • Cook for about 5 minutes, or until golden brown and the waffle releases easily.
  • Enjoy warm with raw honey and fresh fruit! 🧇

Pro tip: I use the GreenPan waffle maker and absolutely love it! It has a PFAS-free ceramic nonstick coating and makes the waffles come out perfectly every time. 🧇
