Ingredients
- 2 cups quinoa, soaked 4–8 hours or overnight
- 2 tablespoons chia seeds, soaked in 6 tablespoons water for a few hours
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup water
- Optional: 1 tablespoon sesame, pumpkin, or sunflower seeds for topping
Directions
- Preheat your oven to 375°F.
- Line a 9.5 × 5-inch loaf pan with parchment paper.
- Drain and rinse the soaked quinoa well using a fine mesh strainer.
- Add the quinoa, soaked chia seeds, baking soda, salt, and water to a high-speed blender.
- Blend until almost smooth.
- Pour the batter into the prepared loaf pan.
- Sprinkle with your favorite seeds, if desired.
- Bake for approximately 60 minutes, or until the top is golden brown and the loaf feels firm.
- Allow the bread to cool before slicing.
A Few Tips
- Store leftovers in an airtight container in the refrigerator for up to five days.
