Why Celery Juice?
Celery juice has become well known through the work of Anthony William, who recommends drinking 16–32 ounces of fresh, plain celery juice on an empty stomach as a daily practice for supporting digestion and overall health.
One of the unique qualities of celery juice is its naturally occurring mineral salts, particularly sodium-containing mineral salts. These compounds are believed to help support many processes throughout the body, especially digestion, the intestinal environment, liver function, and the body’s natural cleansing processes.
Celery is also naturally rich in water and provides potassium, vitamin K, folate, vitamin C, and numerous antioxidant and anti-inflammatory plant compounds, including apigenin and luteolin.
Supporting Digestion and Hydrochloric Acid
One of the most recognized uses of celery juice is for supporting digestion and hydrochloric acid (HCl) in the stomach.
Adequate stomach acid is important for breaking down food, particularly protein, and helping the body absorb certain nutrients. The naturally occurring mineral salts in celery juice are thought to help support and strengthen hydrochloric acid over time, which may support digestion and create a less favorable digestive environment for unwanted microorganisms.
This is one reason celery juice is often incorporated when someone experiences bloating, indigestion, reflux, constipation, or other digestive concerns.
While the specific effect of celery juice on hydrochloric acid has not been well studied in clinical trials, digestive support continues to be one of the primary reasons people incorporate celery juice into their wellness routine.
Supporting the Gut Environment
Celery juice is also used to help support a healthier intestinal environment. Its naturally occurring mineral salts and plant compounds may help create conditions that are less favorable for certain unwanted bacteria, yeast, fungi, and other microorganisms while supporting overall digestive health.
This is especially relevant to the gut-brain connection because the health of the intestinal environment can influence immune signaling, inflammation, nutrient absorption, and communication between the digestive and nervous systems.
Celery juice itself contains very little fiber once juiced, so it is still important to eat an abundance of whole fruits, vegetables, leafy greens, herbs, whole grains, legumes, nuts, and seeds to provide the fibers that nourish beneficial gut bacteria.
Liver and Natural Cleansing Support
Celery juice is also commonly used to support the liver and the body’s natural cleansing processes. The liver works continuously to process and eliminate unwanted substances from diet, medications, environmental exposures, hormones, and everyday metabolism.
Celery juice may also support healthy bile production and digestion by providing hydration, minerals, antioxidants, and beneficial plant compounds. Along with a diet abundant in fruits and vegetables, it can be incorporated as one part of a larger whole-food approach to supporting the body’s natural elimination and detoxification systems, including the liver, kidneys, and digestive tract.
Antioxidant and Inflammatory Support
Celery contains numerous naturally occurring phytonutrients, including apigenin, luteolin, caffeic acid, ferulic acid, and other antioxidant compounds. These compounds have been studied for their antioxidant and anti-inflammatory properties.
Celery juice is also used holistically to help reduce the burden of unwanted microorganisms and toxins that may contribute to chronic inflammation. While these broader therapeutic uses have not been confirmed specifically through human trials of celery juice, its antioxidant and phytonutrient content provides another nutritional reason to include it as part of a plant-rich diet.
Brain, Mood, and Nervous System Support
The naturally occurring mineral salts and electrolytes in celery juice can also support normal nerve and cellular function, making it a beneficial addition to a broader approach to brain and nervous system health.
This fits especially well within the gut-brain connection. Hydration, electrolyte balance, adequate nutrition, gut health, and nervous system regulation all contribute to healthy brain function and overall well-being.
People who regularly incorporate celery juice often describe improvements in areas such as digestion, energy, mental clarity, skin, and general well-being. Individual experiences vary, and celery juice is best viewed as one supportive practice within a larger healthy lifestyle.
Why Drink Celery Juice Plain and on an Empty Stomach?
For the greatest benefit, celery juice is traditionally consumed fresh, plain, and on an empty stomach rather than combined with apples, lemons, cucumbers, or other ingredients. The recommendation popularized by Anthony William is generally 16 ounces daily, with some people gradually working toward 24–32 ounces depending on individual needs and tolerance.
A simple morning routine can look like this:
- Begin with 16 ounces of lemon water.
Lemon water helps rehydrate the body after sleeping and provides vitamin C, antioxidants, and naturally occurring plant compounds. - Wait approximately 15–30 minutes, then drink 16 ounces of fresh, plain celery juice.
Those who tolerate it well may gradually increase the amount if desired. - Wait another 15–30 minutes before breakfast.
Follow with a nourishing breakfast rich in whole plant foods.
Keeping celery juice fresh and separate from other ingredients allows you to get the full benefits of pure celery juice without diluting it with other foods.
Celery Juice Recipe
Ingredients:
1 large bunch of organic celery, washed
Juicer Method:
Run the celery through a juicer until you have about 16 ounces of fresh celery juice. Drink immediately for the greatest benefit.
High-Speed Blender Method:
Cut the celery into smaller pieces and blend until smooth, using the tamper as needed. If necessary, add a small amount of water to help it blend. Strain through a nut milk bag or fine mesh strainer and enjoy immediately.
For the greatest benefit, drink celery juice fresh and plain without adding lemon, apple, cucumber, or other ingredients.
What Celery Juice May Support
When incorporated consistently alongside a nourishing whole-food diet and healthy lifestyle, celery juice may help support:
- Hydration and electrolyte balance
- Digestion and regular bowel function
- A healthier intestinal environment
- Antioxidant and inflammatory balance
- Liver and digestive function
- The body’s natural cleansing processes
- Brain and nervous system health
- Energy and mental clarity
- Skin and overall wellness
Celery juice is also used more broadly in holistic wellness for supporting the body’s natural cleansing processes and addressing underlying imbalances associated with unwanted pathogens and toxins.
Sometimes the simplest daily practices can make a meaningful difference in how we feel, and celery juice is one of my favorites for supporting the body from the inside out.
