I’ve been obsessed with these beet burgers/ patties and thought I’d share. They are so easy to make and only requires a handful of ingredients. For anyone with food allergies, this one is pretty safe. It has no fat, no oils, no nuts/seeds, no gluten and dairy.
Here’s the recipe, enjoy!
Ingredients:
1 large beet (or 2 medium), peeled
1 large sweet potato, peeled
1/4 sweet onion or any onion will do
2 cloves garlic
1/4 cup cilantro
1 tsp. Himalayan salt
1/4 tsp paprika
Freshly grated black pepper
3/4 cup quinoa flour
3/4 oat flour
Directions:
*preheat oven to 400F. Place parchment paper onto a baking sheet and set aside.
*cut beet and sweet potato into small chunks.
*add half of them in a food processor along with the onion, garlic and cilantro. Process until the mixture is fine but not mushy.
*dump mixture into a large mixing bowl.
*add the rest of the ingredients into the food processor (leaving out the flours for now)
*process the same way and dump into the bowl.
*add the flours into the bowl and mix well using your hands.
*form into burger size patties and place on the baking sheet.
*bake for 20 mins then take out and flip the patties. Bake for another 10 mins and take out. *Let sit for 10 mins for burgers to cool down.
*enjoy on gluten free bread, buns, lettuce wraps, or on a rainbow salad with homemade dressing.
