These healthy savory waffles are a staple in our house, I love them for breakfast, lunch or as a snack! I usually make a large batch and freeze them, and just toast some whenever the craving comes. They go well with hummus, cashew spread, guacamole, or this vegan cream cheese I just found at the store. Just add some veggies and it makes for a great filling vegan meal. Enjoy, here’s the recipe:

Ingredients:

1 1/2 cups oat flour

1 1/2 cups quinoa flour

2 Tspn. Ground flax seeds

1 carrot, peeled and chopped into chunks

2 small red potatoes, peeled and chopped into chunks

1 small sweet potato, peeled and chopped into chunks

1/2 – 1 tsp. Himalayan salt

1 tsp. Baking soda

1 tsp. Garlic powder

2 cups water

Directions:

•Preheat a non stick waffle maker.

•In a large bowl, mix together the flours, flax seeds, salt, baking soda, garlic powder, set aside.

•Put all vegetables and water into a high-speed blender, blend well until smooth (a bit chunky is fine too)

•Pour the wet ingredients into the flour mixture, mix well, it should be a thick batter. Let the batter sit for about 5 mins to let it set.

•Pour about 1 cup of batter into the waffle make, use a spoon to flatten it out a bit, cook until brown.

•Repeat and let cool. These are even better when they are toasted before eating, they get slightly crunchy. *
