2 cups chopped lettuce or other mixed greens –
(Romaine lettuce, arugula, dandelion greens, kale, chard, butter lettuce)
¼ cup grated carrot or grated raw beet
½ cup chopped or sliced tomato, cucumber or jicama
½ avocado, chopped
½ cup raw fermented vegetables like sauerkraut or kimchi, etc.


Optional: add any other raw veggies your heart desires!

Instructions

  1. Combine avocado and fermented sauerkraut/kimchi, mash with a fork
  2. Combine all other ingredients in a bowl
  3. Add avocado mixture to a salad bowl and mix well, enjoy!
  4. Add a protein on the side like nuts/seeds, cooked millet/quinoa, an organic/pastured hard-boiled egg, or a small piece of wild caught fish.
