Ingredients
- 2-3 sweet potatoes
- 2 beets
- 2 cups any kind of winter squash
- 3 cloves garlic, chopped
- 2 Tsp. green onions, cilantro, or parsley, chopped
- ½ Tsp. Coconut Oil
- ½ tsp. garlic powder
- ½ tsp. dried herbs, basil, parsley, etc. (optional fresh herb for garnish)
- Pink Himalayan sea salt and black pepper to taste
Directions
- Preheat oven to 400F
- Peel & cut sweet potatoes, beets, and squash into cubes
- Combine all ingredients and mix well
- Put into a baking dish or cookie sheet, single layer
- Bake for about 30 minutes or until tender, Enjoy!
