Ingredients

  • 2-3 sweet potatoes
  • 2 beets
  • 2 cups any kind of winter squash
  • 3 cloves garlic, chopped
  • 2 Tsp. green onions, cilantro, or parsley, chopped
  • ½ Tsp. Coconut Oil
  • ½ tsp. garlic powder
  • ½ tsp. dried herbs, basil, parsley, etc. (optional fresh herb for garnish)
  • Pink Himalayan sea salt and black pepper to taste

Directions

  1. Preheat oven to 400F
  2. Peel & cut sweet potatoes, beets, and squash into cubes
  3. Combine all ingredients and mix well
  4. Put into a baking dish or cookie sheet, single layer
  5. Bake for about 30 minutes or until tender, Enjoy!
